September 2002 - Shirred Eggs

Many people have not tried shirred eggs and are surprised at how good they are.

Shirred eggs are also easy and quick and good for a group.

Makes enough to serve 4

16 Tbs of melted butter
8 Tbs sharp cheddar
8 eggs
8 3 oz. ramekins

Preheat oven to 350°.

Pour 1 tsp of melted butter into the bottom of a ramekin. Break one egg into a ramekin and top with another tsp of melted butter.

Put the 8 ramekins on a cookie sheet and bake for 9 minutes.

Remove and sprinkle 1 Tbs of grated sharp cheddar cheese on top of each egg.

Return to the oven for another 3 minutes.

Serve in the ramekins (reminding everyone not to touch the dishes).
